The Black Tonkatsu Loin Set Meal!!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The breading is pitch black!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">At first glance, you might think it\u2019s burnt, but no.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1448 aligncenter\" src=\"https:\/\/higojournal.com\/en\/wp-content\/uploads\/2025\/01\/1738040273-a4a2ffab70e1561f8a1ad8ffb2b48965.jpg\" alt=\"\" width=\"500\" height=\"375\" \/><\/p>\n<p><span style=\"font-weight: 400;\">The tonkatsu is thick, juicy, and tender. You can really taste the quality of the meat.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1449 aligncenter\" src=\"https:\/\/higojournal.com\/en\/wp-content\/uploads\/2025\/01\/1738040291-6fc312dafded99068d7e46d9329dd50f.jpg\" alt=\"\" width=\"500\" height=\"375\" \/><\/p>\n<p><span style=\"font-weight: 400;\">Eating it plain allows you to appreciate the natural sweetness of the meat, but I recommend trying it with some <\/span><i><span style=\"font-weight: 400;\">goma shio <\/span><\/i><span style=\"font-weight: 400;\">(sesame salt).<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1450 aligncenter\" src=\"https:\/\/higojournal.com\/en\/wp-content\/uploads\/2025\/01\/1738040312-92cae82fae912d677f79b67d9d7c4023.jpg\" alt=\"\" width=\"500\" height=\"373\" \/><\/p>\n<p><span style=\"font-weight: 400;\">There\u2019s also the regular loin katsu.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-1451 aligncenter\" src=\"https:\/\/higojournal.com\/en\/wp-content\/uploads\/2025\/01\/1738040336-a003d2a0d17d5e35609b9f90783de9e7.jpg\" alt=\"\" width=\"500\" height=\"373\" \/><\/p>\n<p><span style=\"font-weight: 400;\">This one too is tender and sweet.<\/span><\/p>\n<h2><b>The Secret Of Being Black<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">I was surprised to learn how the black breadcrumbs are made.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">First, bamboo charcoal is kneaded into bread dough and baked into a pitch-black bread. The bread is then ground down into the breadcrumbs used for the tonkatsu.
